When I first start my Fiero, the oil pressure shows 80 PSI, at idle.  After driving for an 20 minutes or so, the pressure drops to about 60 PSI.  Actually, the pressure changes somewhat with RPM, after the engine is warm.  I've been tempted to replace the OPS, again, but not sure that's the issue.

Not a problem. ALL motors drop oil pressure after the oil heats up. 60PSI at idle is very good and variations of pressure are normal under varying engine RPM's.
You can't fix stupid but, you can adjust it with a 2x4.

I was always taught 10psi for every 1000 rpm

Me, too, but I have a 350 that is only supposed to be sbout 30PSI, or 5 PSI at idle.  Seems low, to me.
